🥜 Peanut Cake Recipe
Ingredients:
For the cake:
2 cups (250 g) all-purpose flour
1 cup (200 g) sugar
1 cup (240 ml) milk
3 large eggs
1/2 cup (120 ml) vegetable oil or melted butter
1 cup (120 g) roasted, unsalted peanuts (finely ground)
1 tbsp baking powder
1 tsp vanilla extract
A pinch of salt
For the topping (optional):
1/2 cup (100 g) sugar
1/4 cup (60 ml) milk
2 tbsp butter
1/2 cup (60 g) crushed peanuts
Instructions:
Preheat the oven to 180°C (350°F). Grease and flour a medium cake pan.
Prepare the batter:
In a large bowl, beat the eggs, sugar, and oil (or melted butter) until creamy. Add the milk and vanilla, and mix well.
Add the dry ingredients:
In another bowl, combine the flour, baking powder, salt, and ground peanuts. Gradually mix the dry ingredients into the wet mixture until smooth.
Bake:
Pour the batter into the prepared pan and bake for about 35–40 minutes, or until a toothpick inserted in the center comes out clean.
Prepare the topping (optional):
In a small saucepan, combine sugar, milk, and butter. Bring to a boil and cook for 2–3 minutes, stirring constantly. Remove from heat and mix in the crushed peanuts.
Finish:
Pour the topping over the warm cake and let it cool completely before serving.
